I don’t know how it was for you growing up, but for me growing on the East Coast of Australia this was Mums Sunday dinner!

For the uninitiated the main feature is the Roast Lamb with mint sauce and some gravy. I’ve been to plenty of fancy smancy restaurants here in the States that charge $30-$50 for Lamb and serve it with some weird pumpkin sauce or even blackberry sauce. They need to learn that the only way to do it is with mint sauce and gravy. And cast that magic spell that would make it perfectly tender like Mums Lamb. You can’t really tell but those potato’s and sweet potato’s are baked to perfection the way Mum always did them.
I am not sure how many times Mum dazzled us with the fantastic display of culinary prowess. It is featured in my collection Dinner Plate photography only twice, but its a pretty select group of meals in that collection. The number of meals that Mum prepared for us growing up goes in the thousands. Not all as amazing as this Lamb dinner but that were all prepared with love and generosity of heart.
Not only does Mum express her creativity and generosity with great cooking, but also with quilting. She has spent hours making quilts and baby blankets for people that she loves. She has embroidered onesies for her grandchildren and many other babies. One of which I had to cut my daughter out with scissors because of an extreme diaper blowout.
All the remarkable things that Mum has done with her life can’t be listed here. And anyone knows, especially any mother, that to achieve great things there is going to be some obstacles. But Mum fought on and that is why she is the most brave, courageous and strong person that I know.
